I hope everyone had a blessed Easter! We had a nice weekend with family and all the usual family traditions. Coloring eggs, having the Easter basket blessed, Easter egg hunt, good food, and, most importantly, church. The weekend went much too quickly and I regretted not having scheduled the day off, especially since Ethan was home. After a busy morning of back-to-back meetings, I opted to take the afternoon off. The office was quiet (smarter people than I had planned ahead!) and I had no meetings in the afternoon. It was nice to spend the rest of the day with Ethan, and I managed to get a lot of things done around the house.
With treatment behind me, I have been working on getting my body back in shape. As I mentioned in an earlier post, I am starting with yoga and the treadmill, and so far, I’ve managed 4 days out of 6. Only one of those days, the first, was yoga. I am still suffering from some lower back pain, as my muscles are apparently much tighter than I anticipated. So the treadmill it will be for a little while!
I will admit that I deviated slightly from my plants-based diet over the weekend. What would Easter be without some kielbasi?!? (I kept my intake at two small pieces.) And I did have one bite of the Easter ham at mom’s. I have to admit that I haven’t really missed it.
Mom did make sure there were some nice vegetarian options for me. Among them: Sweet potatos (yams, really) baked in orange juice and orange zest that were the best yams I’ve ever had. I did not miss the brown sugar, butter or marshmallows — at all! I highly recommend preparing them this way. She also made a great Three-Bean Pasta Salad and I’ve provided the like to the recipe below. The dressing on the salad was light and yummy! Luckily, there were leftovers, so I’m set for lunch and dinner a few days!
