Polenta

It was time for my quarterly visit with my naturalist this week. As always, hormone balancing and kidneys showed up. I think the hormone thing will be forever, but we were able to remove black cohosh (at least for the time being). For now, it’s wild yam (which my body apparently loves), women’s x-action, flash-ease, and 7 keto.

Heavy metals always show up on my scan (they are so hard to avoid) but this time the biggie was a pesticide. Interestingly enough she had a few other patients who complained of mouth burning (not quite the same as my mouth pain). All were related to a pesticide, specifically one used on apples. And so, as a person who eats an apple (or two), every single day, it does make me wonder. I know you will all be shocked that I don’t do organic apples… My favorite apples are galas, and they are hard to find in organic… at least in my neck of the woods. So I will work on detoxing with my homeopathic, Addastat and Heavy Metal Detox, and yes, organic apples are in my future.  (I do need to finish the two bags sitting on my counter first…) It will be interesting to see, once I make the switch, if there is any difference with the roof of my mouth.

There were a few other things recommended: V itamin D3 and Balance B, (of course). Super Algae for thyroid, Super GLA and Indole-3-Carbinol.

We tried a few new recipes this week. Both are from the McDougall Quick & Easy Cookbook…

Bean and Rice Gumbo – this was a tasty healthy gumbo made with black beans and black-eyed peas. No complaints

Polenta with Mushrooms – Polenta is a new food for us. Ethan, who likes corn bread and mushrooms, liked this one. David and I thought it was good, but not great. Not sure I’ll make this one again, although I would like to try polenta again. I find that the Quick & Easy recipes are certainly quick and easy, but not always the most flavorful. I think many of them need more seasonings.

Anyone have any good (healthy) polenta recipes?

    How did you fix the polenta.

    Polenta for us was a yearly meal that was brought back from Italy from my Grandparents. So when I think of polenta, I have many many warm memories.
    I had to laugh when I saw you mentioned Polenta, because we are having it tomorrow night. I know you don’t do meat but I serve a lean beef and pork sausage bolognese sauce over the top of my polenta. My actual corn meal is only corn meal, water and salt. When it is set, we dish it up on the plate and pour as much sauce over the top as you would like. The following day, you can fry the polenta that has hardened, and the maple syrup poured over. SOooo. good. You could certainly do a marinara with veggies over it.

    • I bought the polenta in a tube, sliced it and baked it. It was from the “quick and easy” cook book, although I”m sure there are ways to do it from scratch! 🙂 Yeah, I wouldn’t do the beef and pork sausage! You know me too well. lol Marinara with veggies sounds good. It was a nice change from rice and pasta, but I think I still need to get used to it.

        Scratch polenta is about as easy and pushing the polenta in a tube out of the tube. It literally is corn meal(and I buy bulk, it’s ground finer and easier to use), salt and water. Get 6 cups of water to a rolling boil, add 2 teaspoons of salt and 1 3/4 cups cornmeal. Pour the corn meal in very slowly and whisk quickly until it firms up. Watch the water that it doesn’t boil over, cause it has that tendency. Keep whisking the lumps out if you have some (but shouldn’t if you are whisking constantly when you add the meal). Stir/whisk on and off for about 10/15 minutes, turn to warm and put the lid on. Done. It can sit there while you do other things for 30 or more minutes. It actually sets up nicely if let to sit. If it has set up, you can get a nice big chunk of it on your plate and douse with sauce. Sprinkle with grated parm.
        I know a lot of people who even put butter and cheese into the polenta and i guess that is very tasty. I just got so used to it plain with the sauce that that is the way I enjoy it. Just got done cleaning up the mess, it was very good.

      Yes, it’s amazing what herbal hormones can do for women! It’s too bad more women don’t know. I took a bunch of different herbal hormones after Femara destroyed my body, but I’m back to normal now. I can’t imagine that women are dealing with these drugs without that help.

  2. I Made the bean and rice gumbo and liked it a lot. I went towards the hot end in regards to spicyness and cut the salt in half.
