Over the past few weeks I have managed to find a few extra pounds hanging out around my midsection. I’m not entirely sure what I’ve been doing wrong, since I’m still eating a whole food plant based diet. (Well… except for those afternoon snacks of red licorice that I have been sneaking at work… but hey, it’s been stressful!) Maybe a few too many dishes with avocados or cashew cream? (Don’t get me wrong, both are healthy sources of fat, but too much fat is still, well, too much fat.) Or maybe it was a few more cocktails than usual..
Anyway, as part of a Facebook group I belong to, someone put up a challenge: a 10 day “Mary’s Mini”. Mary is Mary McDougall, wife of Dr. John McDougall, who wrote The Starch Solution. It’s called a “mini” because it’s only for the 10 days. The intent of a mini is to “lose weight quickly, with as little effort as possible.” Many people use it as a way to jump start their weight loss, as many individuals who turn to this way of eating do so to lose significant amounts of weight to regain their health. I don’t need to lose a lot, but I do want to get back on track.
So I accepted the challenge! And it started today.
The simplicity of the mini is this: pick one starch (potatoes, sweet potatoes, rice, corn, etc.) and eat that 3 times a day for 10 days, along with green and yellow vegetables. That’s it. Sound boring? Well, yes, and Mary herself will say that’s part of the plan. A little boredom apparently prevents you from eating too much… We’ll see about that.
I picked white potatoes as my starch because I feel like I have a little more flexibility with that and am more familiar with different ways to prepare it. Day One’s menu consisted of the following:
- Brunch: hash brown potatoes cooked on the Foreman grill with no oil with spinach sautéed with water; photo below
- Dinner: (1) Baked potato with mustard, peppers and onions; (3) corn on the cob (with a bit of salt only); raw spiraled zucchini with lime juice and cumin
Day One: So far, so good.
I’m all prepped for tomorrow: similar foods to what I ate today, plus a bunch of chopped veggies to tide me over during the day and keep me away from the licorice!
