I have officially reached the halfway point of radiation! 17 out of 34 treatments under my belt. The time has gone by so quickly, and the staff at NROC is SO nice, I don’t even mind going. No long waits like at the oncologist. I don’t think I”ve waited more than 2 minutes ever. Before I know it, it will all be done. I’m seeing the light at the end of the tunnel!
To date, I haven’t experienced any significant side effects from the radiation. No skin sensitivity, no fatigue. I did experience some tenderness when laying on my right side at bedtime, but it doesn’t seem to be bothering my sleep. I am also proactively slathering my skin with all-natural lotions. I’m not sure if that’s making the difference, but it doesn’t hurt.
Ethan and I did some good juicing this week. We’ve decided that we LOVE juicing red beets!
And speaking of yummy things… Thanks to mom for the soups this week. Yesterday: Vegetable Bean Soup. Today: Manhattan Clam Chowder. Delicious!

2 cups whole wheat pastry flour 2 tsp baking soda
2 tsp ground cinnamon
¼ tsp ground cardamom
1/2 tsp salt
3/4 cup sugar
2 large egg whites
¼ cup EVOO
½ cup Fat-free plain Greek yogurt
2 cups grated carrots
2 cups fresh or frozen cranberries, divided
¼ cup shelled pistachios, finely chopped
PREHEAT OVEN TO 375*F.
Line muffin cups with paper liners.
1. In a large bowl, whisk the first 5 ingredients (through salt).
2. In another bowl, grate 1 tsp orange zest and squeeze ¼ cup orange juice. Whisk in the sugar, egg whites, oil, and yogurt. Stir into the flour mixture just until moistened. Fold in the carrots and 1 ½ cups cranberries.
3. Divide batter among muffin cups. Cups will be very full. Top with pistachios and remaining cranberries.
4. Bake until a toothpick inserted in a muffin comes out clean (22-25 minutes). Let cool in the pan on a wire rack for 5 minutes. Unmold; cool completely on rack.
